Fresh Veggie Wraps

I love these veggie wraps.  Not just because they are nutritious, but because they are so versatile.  You can use whichever veggies you currently have in your fridge.  You can also swap the bulgur for a gluten-free alternative, such as quinoa.  They are fresh and crunchy with a hint of creaminess from the hummus, and the best part, they make great portable leftovers while still keeping their crunch!

Ingredients
  1. 2 carrots, washed and shredded
  2. 2 lebanese cucumbers, washed and shredded
  3. a handful of baby sunflower sprouts, washed
  4. 2 cups spinach, washed, stems torn away
  5. 2 roma tomatoes, washed and sliced in quarters
  6. 3/4 cups dark coarse bulgur
  7. 1 1/2 cups water
  8. 2 cups green lentils
  9. 1/2 cup red onion, sliced
  10. 1 teaspoon coconut oil
  11. 1 teaspoon ground cumin
  12. a pinch of kosher sea salt
  13. Store bought or homemade kamut round wraps (we used store bought here)
For the hummus
  1. 2 cloves garlic, chopped
  2. 3 tablespoons tahini
  3. 2 tablespoons olive oil
  4. juice of 1 lemon
  5. 2 cups chickpeas, rinsed
  6. a pinch of kosher sea salt
Instructions
  1. Using a mandoline, carefully shred the carrots and cucumbers (watch your fingers!). Set aside.
  2. In a small saucepan, bring water to a boil.
  3. Add bulgur, cover, and simmer for approximately 30 minutes, or until all liquid has been absorbed.
  4. In a skillet over medium heat, heat the coconut oil. Add red onion and sauté for 5 minutes.
  5. Add cumin and lentils and cook for approximately 10 minutes.
  6. Add the cooked bulgur, stir to combine and season with a pinch of sea salt. Remove from heat and set aside.
For the hummus
  1. In a food processor, add all ingredients and pulse for a few seconds until you have a smooth consistency.
  2. Taste. If you would like to add some more lemon, go for it.
  3. Place hummus in a bowl.
Assembling the wraps
  1. Spread the wraps with hummus.
  2. Add carrots, cucumbers, sprouts, tomatoes, and bulgur/lentil mix in rows.
  3. Fold the wrap, cut in half and serve.
  4. Enjoy!
